This bread is such a crowd pleasure and is great with some olive oil, parmesan cheese and balsamic vinegar dipping sauce!
combine in a large bowl 3 Cups sifted flour, 2 tsp salt, 1 tsp rosemary, 1 tsp thyme & 1 tsp of sage. (you can change out the herbs as you see fit, add garlic or just have plain bread with no herbs)
To activate yeast before putting in with the dry ingredients you will put 1 2/3 Cup 110*F water with 1 tsp active yeast, let it set for 5 minutes before adding into the bread and mix until combined. Let it set in a warm place for 18-24 hours, remove and fold over, dust with flour and put into a dutch oven with parchment paper and cover for 2 hours.
Pre-heat oven to 450*F and bake for 30-40 minutes or until golden brown. Remove the lid and bake for 10-15 minutes more if you want it crustier. :)
You can also slice a few lines on the dough to create a unique design on the top.
