Biscuits & Gravy

In a large bowl combine all dry ingredients, combine very cold butter until the texture of dough is about pea size. All all milk at once and stir until combined.

Sometimes there's nothing better for breakfast than a comforting plate of homemade biscuits and gravy. Here's my recipe that I love.
3 Cups Flour
4 tsp Baking powder
1 TBS Sugar
1 tsp Salt
3/4 tsp Cream of Tartar
3/4 Cup Cold Butter in tablespoon slices
1 1/4 Cups Buttermilk or Whole Milk
In a large bowl combine all dry ingredients, combine very cold butter until the texture of doough is about pea size. All all milk at once and stir until combined.
Turn dough on a lightly floured surface and knead in 4-5 good strokes or until dough pulls together.
Pat or lightly roll into 3/4 inch thick and cut dough with a floured circle cookie cutter.
Place biscuits 1 inch apart on an un-greased baking sheet and bake at 450*F for 8-12 minute until lightly golden brown on top.
While your biscuits are cooking lets make the gravy...
In a sauce pan cook 1 pound breakfast sausage of choice until cooked, hot or mild
Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the 1/3 Cup of flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the 3 Cups of milk, stirring constantly, add Salt and pepper to taste and more milk to thin out if too thick. Turn off heat and pour over biscuits and enjoy!
