Spicy Breakfast Hash

In a microwave bowl put 1 1/4 lb unpeeled and diced potatoes in 1 inch of water and microwave for 6 minutes on high, drain and set aside.
1/4 Cup Veggie oil
1 large diced onion
6 cloves garlic chopped
1 green & red pepper chopped
1-2 jalapenos chopped
1/2 tsp pepper
1 tsp paprika
1/2 Cup vegetable broth, 1 cup grated cheddar cheese. If you want to elevate the dish you can add an soft egg on top so the yolk is running. Or for a decorative affect, poached egg. :)
Heat oil in a large cast-iron skillet over medium-high heat until hot. Add, onion, bell pepper, and jalapenos and cook for 10 minutes, then add garlic. Reduce heat to medium and add potatoes, 1 tsp of salt and pepper, as well as paprika. Pour broth into skillet and cook stirring occasionally. About 15 minutes when the broth is completely gone it will be time to turn off heat and serve! I like to put shredded cheese in mine as well and Kevin loves his hot sauce and cheese!
