Sweet Hawaiian Roll Stuffing

2 Cups of Yellow Onion Diced
1 1/2 Cups of Diced Celery
6-8 Fresh Chopped Sage Leaves
1 1/2 Cups of Broth Of choice - I use Veggie Broth - You might need up to 1 Cup more depending on how dry the croutons are.
1 Large Egg
1 Stick of Butter Plus more for coating the dish.
Salt and Pepper to taste - I use about 1 TBS of Salt and 1/2 Tablespoon of pepper
Pre-heat oven to 350*F and coat the baking dish was a good amount of butter. I use 36 Sweet Hawaiian Rolls and diced them up into cubes and roast in the oven for 10-14 minutes until crispy. You can make this ahead of time and put in a ziplock bag after it's cooled.
In a large sauce pan over medium heat - melt butter and sautee onions and celery for about 6-8 minutes, add sage, salt and pepper and simmer for 1-2 minutes. During that time mix stock and 1 egg and wisk until combined. Add veggies and butter mixture to broth and mix well then toss all together with bread and put into dish and bake 28-40 minutes depending on gas/electric/convection oven. The stuffing should be fluffy when you go to fluff it after cooking.
