Pancakes

2 1/2 Cups flour
1 tsp Baking soda
1 tsp Baking powder
2 tsp salt
3 TBS Sugar
2 Eggs separated (whites/yolks)
2 1/2 Cups Buttermilk
1/2 Cup Melted Butter
- Butter to cook pancakes in.
1. Sift and whisk together all dry ingredients first and set aside.
2. Combine Buttermilk, egg yolks and melted butter (Whisk together)
3. Combine the wet mixture with the dry ingredients by folding the batter (do not whisk) You will have a clumpy mixture.
4. Then fold in the egg whites into the batter and let the batter rest for 15-30 minutes to let the baking soda and powder activate and do it's magic.
5. It's ALWAYS best to cook in a cast iron skillet with butter, it will allow for cooking pockets to absorb butter and syrup for after and create that nice crust, but it's not required. :)
This will give you the best fluffiest pancakes.
