Oven-Fried Chicken?

So, most of us would agree that fried chicken is amazing, but how do we get rid of the oily fried part? We baked it in the oven! This works best with convection ovens.
Soak your chicken in buttermilk for at least an hour before starting.
prep ingredients
2 Eggs
2 Cups Buttermilk
1 1/4 Cups Bread crumbs (panko or regular)
1/2 tsp paprika
1/4 Cup flour
1/8 tsp Black pepper, 2-3 lbs chicken with skin on, 4-6 TBS melted butter.
Combine the egg and milk in a dish, bread crumbs in another. Pre-heat oven to 375*F. Mix all dry ingredients together in a dish. Dip the chicken from the buttermilk bath into bread crumbs and place on baking dish so they're not touching. Drizzle melted butter over all the chicken and bake in the oven for 40-60 minutes until chicken reaches 180*F. DO NOT MOVE THE CHICKEN WHILE BAKING. It's always best to bake on a silicone pad so it doesn't stick to the pan.
