Mirror Glaze Recipe

To do the mirror glaze, I know it seems complicate but it's actually easier than you would think! All you need is: 1 1/4 Cup Water1 1/2 Cup Sugar14 oz Sweetened Condensed Milk15 Gelatin Sheet (I order mine on Amazon cause I haven't found any in the local store)26 oz Dark Chocolate (If you are making colors then use White Chocolate)Food Coloring of choice (A few drops goes a long way, so add, stir and if needed, add more) First in a pot on the stove, boil the water, sugar and condensed milk for 1 minute and remove from heat. Pour over bowl with white chocolate and while that's melting the chocolate individually place each gelatin sheet separately in a bowl with water to bloom for 5 minutes. It's important to place them in one at a time so they get coated with water equally and bloom properly. After 5 minutes squeeze out water from gelatin sheets and put in the melted chocolate and mix until dissolved (about 1-2 minutes). If you have an emulsifier mixer then you can blend everything together faster and then strain the chocolate mixture through a wire mesh to remove any bubbles to create a silky smooth chocolate. Separate in different bowls if you want multiple colors or if you want one solid color then you can keep it all in one bowl. For the glazed cake I made above, I pulled out 6 TBSP of the glaze and used a Red food coloring and then used Black food coloring unless you're doing dark chocolate chips to make a dark chocolate glaze. Once the temperature of the glaze reaches 98* F you can pour the glaze over the *Frozen Cake (Cake must have been in the freezer at least 45 minutes before pouring mirror glaze over it. If you want a smoother finish like what I created, make sure you crumb coat your cake before putting it in the freezer. Side note: You can use Gelatin powder since it can easily be purchased in the grocery stores. If you're using gelatin powder this is the recipe you will follow:
26 oz chocolate (white if you're making colored glaze, dark if you want a richer takes with no color except the black/brown look), 1 1/2 Cup water, 2 2/3 Cup sugar, 14 oz condensed milk, 1 TBS vanilla extract & 3 TBS gelatin powder. Take 1/4 cup of water and add your gelatin so it can bloom for 5-10 minutes. While that's blooming, you will combine all your ingredients except the chocolate in a sauce pan and just before it starts to boil you will remove from heat and then add your gelatin mixture and mix together to dissolve (about 1-2 minutes) then add it to your chocolate and let it melt for just a minute and stir until all melted and combined. Let it set out to come to 96-98*F before you pour over your frozen cake(s). If you're adding colors then separate in as many containers as you want color and using food coloring create your colors, remember a little food coloring goes a long way so only add a drop at a time and mix thoroughly before adding more. This picture above I used 3 drops of white food color (it's called platinum on the bottle) in the largest bowl, in the 2 smaller bowls I have 2 drops of red and 6 drops of red in the other. Now there are 2 different techniques you can use to pour over the cake(s). You can pour them on separately or after mixing your colors pour them all in the same big bowl and DON'T mix it, when you pour it it will come out swirly! :)
