Guinness Beer Short Ribs

If you're looking for a hearty meal with bold flavors, look no further! This Guinness Short Ribs will satisfy your appetite!

Make sure you check the butcher area for short ribs because they can be hard to find and usually go quick.

What you'll need:

4 lbs Beef short ribs

3 Cups Chopped Carrots

3 Celery Stalks Chopped

4 Cloves of Garlic

3-4 Sprigs of thyme

1 Large Onion Chopped

2 Cups Beef Stock

3-4 TBS Tomato Paste

3 TBS Brown Sugar

2 TBS Olive Oil

2 Bottles of Guinness Stout Beer.

Pre-heat oven to 375*F

Sear meat in your Dutch oven with oil. Remove from the pot and add onions for 6-8 minutes of cooking, then add your garlic, celery & carrots for 6-8 more minutes. Add Sugar, tomato paste and stir and let cook for another 2 minutes. Then add liquids to deglaze and add back your meat and top with all your herbs and bake in the oven for 4-6 hours, stirring half way through and add more liquid if it seems to evaporated too much (but add beef broth for additional liquid if needed).

Serve as is over over mashed potatoes and enjoy!
