Gluten Free Chocolate Cake


This recipe is amazing and you would NEVER guess it's gluten free!

2 cups + 3 tbsp (265 g) plain gluten free flour blend (I've used a simple store-bought blend containing only rice, potato and maize flours, with no added xanthan gum)

1/2 tsp xanthan gum

3/8 cup + 1/2 tbsp cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 1/2 cups granulated sugar

1/2 tsp salt

2 eggs, room temperature

1 cup + 2 tsp milk, room temperature

1/2 cup + 1 tsp vegetable or sunflower oil

1 cup + 2 tsp (250 mL) boiling hot water


First sift (make sure you sift!) all your dry ingredients together and mix with a whisk to incorporate. Then add all your other ingredients except the boiling water, we don't want to add that until all is combined and we are ready to pour into our pans. Once combined, make sure your cake pans are sprayed and floured to prevent sticking or you can use parchment paper on the bottom. Then pour in the boiling water and mix until all combined and you have a smooth batter. Equally distribute your batter int he pans and place them in the oven on 350*F for 20-30 minutes until the tooth pick comes out clean and the top bounces back when you lightly push on it. I also place baking strips around the cake pans to make sure I get an evenly baked cake and it doesn't dome up in the middle. Once I remove the cakes from the oven I then place them directly into the freezer for 10-15 minutes to cool and lock in the moisture. While they're in the oven I will then make the chocolate meringue icing!


Chocolate Meringue Icing is exactly how I make my Italian Buttercream recipe in this blog, except instead of adding the butter when you get to room temperature you add 1/4 cup melted chocolate of choice with 1 tsp of coconut oil as it's melting in the microwave on 30 seconds on high and mix well. Once melted I will drizzle into the meringue while mixing on med-high until all incorporated and then pull the cakes out of the freezer and ensure they're at least room temperature or cool to touch before putting your cake together. I finish mine off with freshly shaved chocolate.
