French Onion Soup

For all you Onion lovers out there, here's 2 ways to make your French onion soup in around 1 hour! Some people will use red wine and some use white wine. I like both, so here's my French onion soup 2 ways! Let me know which one was your favorite!
4 Yellow Onions
3 TBS Butter
4 Cloves Minced Garlic
3 TBS Flour
1/2 Cup White Wine (only use what you like to drink)
6 Cups beef stock
1 tsp Worcestershire sauce
1 Bay leaf
3 Sprigs of fresh Thyme (1 tsp dried thyme)
salt and pepper to taste
Grated cheese (Gruyere, Asiago, Swiss or Mozzarella all work great)
Saute Onions in melted butter until caramelized. about 30-40 minutes on medium heat. Add garlic and saute for another minute. Stir in flour and cook for an additional minute. Pour the wine in to deglaze using a wooden spoon. Add beef stock and Worcestershire sauce, bay leaf and thyme. Bring to simmer. Reduce the heat to medium low and simmer for 10-15 minutes stirring occasionally. Remove the thyme stems if you used fresh thyme and bay leaf from the pot and add salt and pepper to taste. Use these instructions for both recipes. Top with cheese last, I also like to use a garlic bread with cheese to put on top to get cheese and crunch from the bread.
1/2 cup unsalted butter
4 onions, sliced
2 garlic cloves, chopped
2 bay leaves
2 fresh thyme sprigs
Kosher salt and freshly ground black pepper
1 cup red wine, about 1/2 bottle
3 heaping tablespoons all-purpose flour
2 quarts beef broth
1 baguette, sliced
1/2 pound grated Gruyere
