Egg Nog - NO raw eggs here!

8 Egg yolks
2 Cups Heavy Cream
1 Cup Sugar
6 Cups Whole Milk
8 TBS Freshly Grated Nutmeg
1/3 Cup Brandy
1/3 Cup Bourbon
Start by whipping the egg yolks until pale yellow (about 5 minutes), add sugar and whip another 2-3 minutes. In a sauce pan heat up 2 Cups of milk with 4 TBS of your nutmeg. Once your milk is warm but not boiling you will SLOWLY add it to your whipped egg mixture while mixing quickly so you don't get scrambled eggs. You're essentially creating a custard base eggnog. Once all the milk is incorporated then add the rest of your milk and other ingredients to the mixture and put into the fridge to chill before serving!
