Creamy Spinach Artichoke Dip

Cook 5 Strips of bacon and remove from the pan once cooked. Add 1/2 Cup of diced onions to the pan and cook for 5 minutes then add 2 cloves of garlic minced and 8-12 oz of artichoke hearts (I use the jarred ones from the store, just try and get all the juices off before putting in the pan. Cook for 5 minutes and then add 4 Cups of spinach to the pan and put a lid on it for 1 minute, then stir until all the spinach has wilted and combined with the other ingredients. Then remove from heat and in a large food processor add your ingredients as well as 1 tsp Olive Oil, 1 1/2 tsp salt, 1 tsp pepper, 2 cups mascarpone cheese, 1 cup parmesan cheese, 1/3 cup sour cream, 1/4 cup mayo, 1 TBS lemon juice freshly squeezed.
Once mixed together well in the food processor, put in a baking dish and bake for 10-12 minutes at 400*F and serve with tortilla chips or peta bread!
